This is a summertime favorite in my family. We used to make this quite often during our summer fishing trip to Canada. It goes so well with pan-fried walleye and fried potatoes. But I could literally eat just this as my meal.
Ingredients
1 Tbsp Olive Oil
2 medium yellow onions sliced thin
2-3 small zucchini sliced thin (I think the smaller ones taste better in dishes. Save the big ones for breads and desserts.)
2 small yellow squash sliced thin
1 - 28 oz. can diced tomatoes (you can use regular or any seasoned variety)
1 cup grated parmesan
2 Tbsp. Italian Seasoning
1 Tbsp. Basil (dried or fresh works)
Salt & Pepper to taste
1/2 Cup water
2 cups Mozzarella cheese or Italian Blend cheese
*Note - seasonings are approximate and can be adjusted to taste Directions Slice onions, zucchini and squash. Drizzle a large sauté pan with olive oil. Layer onions in bottom of pan and sprinkle a thin layer of parmesan and seasonings on top. Top with the can of diced tomatoes and water and another layer of parmesan and seasoning. Continue layering zucchini and squash and adding a layer of parmesan and seasonings between each. Cover and simmer for 30 minutes or until tender. Top veggies with cheese and lid until melted. Serve hot!
