I'm not sure where I found this recipe, but I'm sure it was probably Pinterest! This is one of my go-to quick and easy chicken recipes that is even toddler approved! It's a simple 3-ingredient recipe that makes great leftovers and you can literally pair it with about anything! All you need are three simple ingredients that you probably already have on hand and voila! Check out the recipe below.
This recipe can be made as small or large as needed. I like to make extra so we can enjoy leftovers throughout the week. The chicken is great on salad, in a taco or quesadilla or just reheated. The following recipe is what I typically make.
INGREDIENTS:
3-4 Large Boneless Skinless Chicken Breasts
1-1-1/2 Cups Mayonnaise
1-1/2 Cups Grated Parmesan or a Parmesan Blend
DIRECTIONS:
1. Preheat oven to 350° F
2. Grease a large baking dish with cooking spray.
3. Trim chicken as needed to remove any extra fat or ligaments.
4. Place the chicken in a large bowl or directly in a large baking dish.
5. Coat the chicken generously with mayonnaise on all sides.
6. Cover the chicken with the parmesan - don't hold back!
7. Place the chicken in preheated oven and bake for 45 minutes to an hour or until juices run clear.
8. Cover the chicken with foil in the last 15-20 minutes to prevent over browning.

For a healthier version, swap out the mayo for Greek yogurt and a squeeze of lemon! I paired this with a packet of Seeds of Change Organic Quinoa & Brown Rice with Garlic and it was a perfect lunch. For a show-stopping dinner pair with creamy mashed potatoes and sautéed green beans or make a fabulous fettucine alfredo!
